Whole Mini-Ham with Sweet Potatoes & Spiced Apples

Ingredients

Garlic Roasted Sweet Potatoes
  • * 1½ pound sweet potatoes, peeled and cut into 1/2-inch thick slices
  • * 2 tablespoons butter, melted
  • * garlic salt

Amaretto Spiced Apples
  • * 2 tablespoons butter
  • * 2 large Granny Smith apples, peeled and thinly sliced
  • * ¼ cup brown sugar
  • * 2 tablespoons amaretto (or 1 teaspoon almond extract)
  • * ¼ teaspoon ground cinnamon
  • * ¼ teaspoon ground allspice
  • * 2 teaspoons water
  • * 1 teaspoon cornstarch


Preparation

  1. Garlic Roasted Sweet Potatoes: Heat oven to 425°F. Arrange potatoes in single layer on baking sheet.
  2. Brush tops of potato slices with melted butter and sprinkle with garlic salt.
  3. Bake at 425°F for 12 minutes. Turn potatoes over; brush with melted butter and sprinkle with garlic salt. Bake an additional 10 minutes until potatoes are tender.
  4. Amaretto Spiced Apples: Melt butter in medium skillet over medium-high heat. Add apples; sauté until tender.
  5. Stir in brown sugar, amaretto, cinnamon and allspice; bring to a boil and cook until brown sugar is dissolved.
  6. Combine water and cornstarch. Stir into apples; cook until desired thickness.
