Grilled Ham Steak with Peach-Chipotle Glaze

Ingredients

  • * 1 Cook's® Bone-in Thick Cut Ham Steak (about 2 pounds)
  • * 2 teaspoons olive oil
  • * 2 cloves garlic, minced
  • * 1 shallot, chopped
  • * 1 jar (20 ounces) peach marmalade
  • * 2 tablespoons Dijon Mustard
  • * 2 tablespoons rice wine vinegar
  • * 3 tablespoons chipotle sauce
  • * 1/8 teaspoon salt
  • * 1/8 teaspoon ground black pepper

Preparation

  1. Heat oil in medium skillet over medium heat. Add garlic and shallots; cook until tender, stirring occasionally. Stir in marmalade, mustard, vinegar, chipotle sauce, salt and pepper. Cook 15 minutes, stirring occasionally; set aside.
  2. Prepare grill for medium heat.
  3. Grill ham steak 5 minutes; turn over. Brush with half of the marmalade mixture; continue grilling 10 minutes, or until ham reaches an internal temperature of 160°F when tested in center with meat thermometer, turning and brushing with the remaining marmalade mixture after 5 minutes.
